Does the fact that I will fit the roller rockers later affect the chip and what timing should I run with the chip? I believe advancing the timing is beneficial to the 5L motors.

The rockers won't adversely effect the tune, while the base ignition timing should be set to the 10 degrees in diagnostics mode
