I installed the roller rockers on my VT V6 Manual recently and have also got Mace memcal, my question is: Would I benefit at all by getting a reflash of my current memcal?
While a revised memcal calibration to suit the rockers would yield greater gains, I wouldn't worry about it unless you were planning on going a larger throttle body.

I just installed the 69mm throttle body onto my car, everything runs fine but it makes a loud sucking air noise when idling. Is that normal?
Assuming that the car runs fine with no engine warning lights coming up on the dash or vacuum leaks, then the increase in induction noise when running a larger throttle body is normal.

I just purchased a 19psi pulley from you guys for my vx Calais supercharged, my car is completely stock, can I slap on the 19psi pulley straight on or for a stock car its better to put a 10psi pulley?
The maximum PSI pulley that we would recommend on a stock factory supercharged v6 (L67) running on 98 octane fuel would be a 10PSI pulley.
