The silencer ports are very small compared to the pictures you have supplied, and also compared to other pictures on the internet. Have you seen this before? What does it mean?

The standard Valve Stem Seals on the L67 heads are color coded green and blue for exhaust and intake. Are the Premium Viton Valve Stem Seals the same?
They're not, in that they're both the same color. In saying this though they're definitely suitable for inlet and exhaust.

To adjust the 6 Speed transmission on my LLT V6 can Mace do that in the tune? OR do I have to take it to a Holden dealer?
Given you have a 6-speed automatic transmission, our tune can adjust it without any problems. Your general Holden dealer would not be able to reprogram the transmission as we would.

To fit a cam in Ecotec/L67, can one remove the fans and radiator and cam will slide out?
With a ecotec/l67 and Holden V8s, this is the case.

To modify my V6 VY I would need new lifters, bearings if not included with cam, roller rockers (as well as previously mentioned items). Is there anything else that Mace could suggest?
Unless you suspect a spun bearing or are having issues I would keep the stock bearings. No need to upgrade or replace roller rockers unless there is a current issue or very high km. Crow Cams Rolle...
