I have a 1989 VN Berlina V8 manual which is fitted with 3.9 diff gears. I also have a VQ Caprice V8 auto with the same diff gears. Would you be able to assist or advise what I need to do so I can correct the speedo? -

SInce you have a VN and VQ Holden, they both run a mechanical speedo with a speedo cable. Therefore you will need to replace the drive gear with a suitable one. Links are given below:
